Avocado Lemon Faux Cheese Cake

This is a recipe that I modified from another one and, wow is it ever good. It is a nice texture and has a great tart flavour with some added sweetness of some real unpasteurized honey in the filling and raisins as the base. This is becoming one of my favourite desserts. But you will not find the calories and other information. This is a healthy dessert; even though it may be high in calories it is also high in fibre, healthy fats and real nutrients. This recipe is raw, gluten free and dairy free, so is a great option for those of us who cannot have these foods and trust me, you will not miss them at all

Avocado Lemon Cheese CakeIngredients:

Crust

  • 1 cup raisins
  • 1 cup pecans

Put the ingredients in a food processor until they clump together. Then press them either in a 8×8 pan or in 6-8 individual dishes or paper muffin forms. Set aside

Filling

  • 2 medium to large avocados
  • 5 tbsp unpasteurized honey
  • the juice of 2 Meyers Lemons or to taste
  • 1 tsp pure vanilla
  • 5 tbsp melted coconut oil
  • 4 tbsp melted coconut butter (also called coconut cream)

Blend the avocados and honey together. Mix in the lemon juice and the vanilla.  Add the melted coconut oil and butter to the avocado and mix gently.

Make sure to taste and see whether you like this.

Put this avocado mix over the crust and allow to firm up in the refrigerator. It will take a little while to firm up, so prepare this desert at least 1 hour ahead of your dinner.

Topping

  • some fresh or frozen strawberries
  • 1 tsp of honey (optional)
  • ground chocolate

Gently simmer in a pan until softened. You may have to add a little water to get it started and to prevent burning. Stir in the honey.

Spoon the strawberry coulis over the avocado mix, sprinkle the chocolate on top and add a small sliced up strawberry to make it look fancy.
