Nut and Herb Flax Seed Bread

This is a variation on the Flax Seed Bread and so yummy. I have added a few ingredients and voila. Try it out, I am sure you will like it


  • 1/3 cup of oil
  • 1/2 cup of water
  • 1 teaspoon of himalayan sea salt
  • 1 tablespoon of baking powder (gluten free)
  • 5 eggs beaten together well
  • 2 cups of flax seed meal (ground flax you can make yourself in a coffee grinder or buy ready made from a store)
  • 1/2 cup pecan pieces
  • 1/2 cup sunflower seeds
  • 1 tbsp Italian herbs or onion powder (you can also use sauteed onions* in stead)

First preheat the oven to 350 degrees F.

In a large bowl, pour the flax seed meal, the salt, the nuts, seeds, herbs and the baking powder and mix well.

Add oil, the water and the eggs and mix those together well.

Line a 9 x 13 dish with oiled parchment paper and pour your batter in. Spread this out evenly. By now it should be thickening a bit, so don’t work on it too long as it may be harder to make nice and smoothe.

Put this into the oven at 350 degrees for about twenty minutes.  If you push on the bread and it bounces back a bit it is done. Let this cool for about twenty minutes, and then take a spatula or knife and cut the bread as you like.

Such a lovely treat

*If you use sauteed onions in this recipe, mix them with the oil and not the dry ingredients.
