Oven Fried Potatoes

We love potatoes in all their forms, but particularly the recipe I am going to give you below. We like it so much that when the family is coming over for a meal they do not have a good dinner without incorporating oven fried potatoes somewhere into the equation.

Lucky for me they are so easy to make and I love them as well.

Now the only thing is that we, because of our heritage, eat them with home made mayonnaise and you might like to eat them with ketchup. If I might make some suggestions, it would be great to have these condiments in a fermented form (of course keeping in mind the portion sizes).


  • 4 medium size potatoes*


  • 1 cup nutritional yeast
  • 1/2 cup grated parmesan cheese
  • 1/3 cup ground almonds
  • 1 tsp curry powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tps unrefined sea salt
  • 1 tsp dried herb mix
  • pepper to taste
  • 1 tbsp extra virgin olive oil for coating

Pre-heat the oven to 425 degrees Fahrenheit

Wash potatoes, peel and cut in small, 1 inch cubes. Put aside in a large enough bowl to mix in.

In another bowl mix the breading ingredients and mix well.

Coat the potatoes with the olive oil first and then with half of the breading mix. The other half can be stored in the fridge or freezer and be used for another time (I am sure there will be another time) or make only half the batch.

Spread the potatoes out on a cookie sheet and place in the oven for about 25-35 minutes, nicely brown and crunchie.


* you can use any kind of potatoes, whether just the white ones or the yams or sweet potatoes, this recipe works with all of them.
