Raw Buckwheat Porridge

This is a great tasting and quickly made porridge. I like it because I can start it in the evening just before going to bed and only have to blend it in the morning. It takes minutes and if you have no time to eat it at home you can easily take it with you and eat it elsewhere.

  • 3 tbsp buckwheat
  • 1/2 cup raw almonds
  • 1/3 cup dried cranberries
  • 1/2 cup fresh (or frozen) fruit, chopped (strawberries, banana, kiwi, mango, mixed berries etc)
  • 8 walnut halves, chopped

The evening before, put your buckwheat  and almonds in a jar with water and let soak overnight. In a separate bowl or jar put your cranberries in 1/2 cup water.

In the morning, rinse your buckwheat (it may be gelatenous) and almonds well. If you use almonds with the skin on you will easily be able to remove these if you prefer, however I leave them on as they double the amount of flavanoids that almonds deliver.

Put the buckwheat, almonds, cranberries including the water in your blender and blend it until still some texture is left, but mostly blended.

Put in a bowl and add your fruit and walnut pieces
