To Make a Bowl of Porridge

This porridge uses the Steel Cut Oats Muesli recipe and is based on a one person serving. If you like to make more servings  just multiply the ingredients and add enough water to cover

  • 1/2 cup of muesli
  • 1/4 cup kefir,*
  • enough water to cover the muesli

*substitute 1/4 cup plain yogurt,  1 tbsp whey, or 1 tsp lemon juice/unpasturized applecider vinegar for the kefir.

Prepare the muesli the night before

Put the muesli in a pan

Grains, nuts and seeds are hard to digest and contain phytic acid. To soften these ingredients and to lower the amount of phytic acid they need to go through a fermentation process.

This is where the kefir or the other souring agents come in.

Add the kefir and add enough water to cover the muesli
Cover and let stand overnight. In the morning you will find that the grains and the dried fruit have puffed up.

To cook the muesli

At this point you want to make sure that there is enough water in the pan so add more if needed.

Turn the stove to low to medium and slowly boil the porridge for about 20 minutes. Stirring regularly to prevent
the muesly from caking to the bottom of the pan

Add some wonderful fresh fruit to the hot porridge letting the hot food warm up the fruit and bring out its sweetness
