Zucchini Apple Salad

Zucchini SaladZucchini is not only good in a zucchini loaf or as a dish to fill with a rice/vegetable filling, it is also great as a salad

This salad can be used as a side dish or as a full lunch when you add some chicken, tuna or feta cheese and nuts as a protein.

The apple in this salad makes for a fresh taste and the dried fruits will add some sweetness.

If you make this salad right before you eat it, your zucchini will be nice and crunchy, however if you make it a day ahead of time, the flavours have a chance to blend nicely, plump up the dried fruit and release their flavour and knowing that zucchini does not have much flavour on its own, this might be just what the doctor ordered.

  • 5 – 6 cup of zucchini, shredded
  • 2 apples, shredded
  • 4 green onions, cut
  • 1 sprigs oregano
  • 1/3 cup raisins
  • 1/2 cup cranberries
  • 1/2 – 1 cup (cultered) relish, to taste
  • 1 tsp Italian herbs
  • Fresh ground pepper
  • 1/2 – 1 cup (kombucha) vinegar*

Put all ingredients in a bowl and mix well.

You can also use a dressing if you find you need it or kefironaise (the recipe for this is in my Kefir Book)


*If you don’t have kombucha vinegar choose a white balsamic vinegar or a nice white wine vinegar.
